Chicken Potato Chip Foil Packs

1 lb. of Boneless Chicken Breasts (approximately 4 breasts)*
4 Medium Potatoes, sliced
1 Medium Onion,  sliced
1 Cup of Old Dutch Sour Cream & Onion Potato Chips**, crushed
(Approximately 3 oz of Potato Chips = 1 Cup)
1 Large Red Bell Pepper, Sliced
4 Tablespoons of Vegetable Oil
4 Sheets of Heavy Duty Aluminum Foil (Approximately 18 inches long)
  • Preheat Grill to low.
  • One each sheet of aluminum foil add 1 Tbsp. of the vegetable oil.
  • On a separate plate lightly roll the chicken breasts in the crushed Old Dutch Sour Cream & Onion Potato Chips, you should have a light coating of potato chips.
  • Next add the onions, red bell peppers, and potatoes.
  • Sprinkle any remaining crushed Old Dutch Sour Cream & Onion Potato Chips on the top of the potatoes.
  • Finally seal each foil pack tightly and place on the grill.
  • Cook approximately one hour or until the chicken is fully cooked.
  • *Substitute the Chicken for Fish, Ground Beef or any of your favorite meat.
  • ** Substitute any of our Old Dutch Potato Chips for the Old Dutch Sour Cream & Onion Potato Chips.
  • You may also cook this in the oven if a grill is not readily available. Seat the oven temperature to  350°F, the bake time should be the same in the oven. Remember to place foil packs onto cookie sheets when baking to avoid any spills.
  • This is a great recipe for camping, just make ahead of time and store in your cooler until you are ready to cook!
