Strawberry Daiquiri Pretzel Dippers

12 oz of White Chocolate*, coarsely chopped
1 Tablespoon of Vegetable Oil
16 Old Dutch Pretzel Rods**
3 - 4 Fresh Limes***, washed & dried well
8 oz of Whipped Strawberry Flavored Cream Cheese, softened
6 oz of Vanilla Flavored Yogurt
1/4 Cup of Frozen Strawberry Daiquiri Mix****, thawed
1 Teaspoon of Rum Extract
  • Place chopped white chocolate into a small, tall, thin microwave safe bowl or glass measuring cup. Microwave on defrost setting or 30% power setting, for 45 second intervals. Stir well using a dry spatula, scraping the sides and bottom of the bowl each time.
  • Stir in vegetable oil and mix well, adding the oil just as the chocolate begins to melt. Heat on 30% power another 30 - 45 seconds, or until chocolate is smooth, stirring to remove lumps.
  • Place container of chocolate in a bowl of hot water, using caution not to splash any water into chocolate, as chocolate will seize and harden.
  • Dip 2/3’s of the Old Dutch Pretzel Rod into the melted chocolate, draining off excess by holding pretzel over the chocolate bowl for a moment, then scraping one edge of the pretzel. Lay coated pretzels on wax paper lined cookie sheet as they are dipped.
  • Grate a small amount of lime zest quickly over each pretzel rod after placing it on the wax paper, using a microplaner or cheese grater. Avoid grating the bitter, white pithy part of the lime.
  • Refrigerate the Pretzel Rods 10 minutes to set chocolate.
  • Prepare dip by placing the cream cheese and yogurt in a small, decorative bowl, then beating until smooth.
  • Stir in the strawberry daiquiri mix and rum extract. Chill for 30 minutes.
  • Serve chilled dip with the chocolate coated pretzel rods.
  • *For best results use a high quality white chocolate variety such as Lindt, or Guittard
    (not confectionary white coating)
  • **Drizzle the melted white chocolate over bunches of Old Dutch Potato Chips, and serve in ‘Chip Clumps’ with the dip.
  • ***Grate lemon or orange peel over the chocolate in lieu of lime peel.
  • ****Substitute frozen lemonade for the daiquiri mix and combine with regular whipped cream cheese, and lemon flavored yogurt.
